<p>I think one of my most favorite salads is a roast beet salad with crumbly goat cheese, a sprinkle of toasty pine nuts and a drizzle of honey.  However, beets are also wonderful raw.  They add a delicious crunch when shaved in a <a rel="nofollow" target="_blank" href="/recipes-juices/detox-diva-vegetable-chopped-salad/">chopped salad</a> and they give you a burst of energy when incorporated into a freshly pressed vegetable juice like <a rel="nofollow" target="_blank" href="/recipes-juices/beet-carrot-juice-build-healthy-blood-help-varicose-veins/">this</a> one. <p>My husband is leaving on a long business trip this week, so I thought I would tuck a few cookies into his bag for Valentine&#8217;s Day.  It took me a little bit of time to find a good recipe that tasted great but wasn&#8217;t loaded with white sugar and processed flour crud.  I settled on a version of this chunky chocolate and granola cookie adapted from <a rel="nofollow" target="_blank" href="http://www.amazon.com/gp/product/1435113985/ref=as_li_ss_tl?ie=UTF8&#038;tag=greelemo07-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=1435113985">Christabel Martin</a>.  The whole-grain oats, nuts and cherries in these cookies add heartiness, while the melted dark chocolate chunks deliver bursts of richness.  The chia seeds pack a nutty punch and they are rich in fiber and Omega-3s too &#8211; perfect for supporting vibrant hair and skin during these cold weeks of February.  Tied with a festive pink ribbon and a little love, I&#8217;m hoping they will be perfect.</p>

<li><strong>Chia seeds</strong> &#8211; Cleansing divas love the versatility of chia seeds. Chia seeds are rich in fiber and Omega-3 fatty acids. Omega-3 fatty acids are believed to support healthy skin, hair and joints. In addition, Omega-3s are valued for their ability to fight heart disease, support a healthy immune system and help protect against abnormal blood clotting. Chia seeds are also believed to be useful in the fight against depression. </li>
<li><strong>Whole wheat pastry flour</strong> &#8211; A healthier alternative to white all-purpose flour, whole wheat pastry flour has a lighter and more enjoyable texture in baked goods than regular whole wheat flour. </li>
<p></br></ul>
<h5>Directions</h5>
<p>Preheat the oven to 350F degrees.  Line two cookie sheets with parchment paper.</p>
<p>Cream the butter, sugar, and vanilla in a medium-sized bowl using electric beaters until pale and fluffy, then add the egg and beat until just combined.  In a separate bowl, sift together the flour and the baking soda.  Add to the butter mixture with the coconut, spelt (or rolled oat) flakes, chocolate (both the chunks and the chips), cherries, nuts and chia seeds.  Slowly incorporate almond milk and olive oil.  Stir with a wooden spoon until a soft dough forms, add an additional tablespoon or two of almond milk if necessary until dough is just soft enough.    </p>
<p>Shape tablespoons of dough into balls, place on the sheets 2 inches apart and flatten slightly.  Bake for 12 minutes, or until crips on top and lightly golden.  Allow to cool on the sheets for a few minutes, then transfer to a wire rack to cool completely. Repeat with the remaining dough.</p>

<p>In a small skillet over low heat, toast sesame seeds for ~5 minutes until lightly golden.  Set aside. </p>
<p>In a small bowl, lightly toss avocado cubes, sesame seeds, olive oil and lemon juice with salt and pepper to taste.  </p>
<p>Arrange endive leaves on a plate and fill each leaf with a scoop of the avocado and sesame seed mixture.  Garnish with parsley and serve!<br />

I find that a green smoothie for breakfast is one of the easiest ways to get started. <p>Frisée lettuce has a frizzy texture with yellow-green leaves that fade to white.  It is crunchy and has a wonderfully tart bite.  It is one of my husband&#8217;s favorite salad ingredients, so we have it often.  I normally eat it on its own drizzled with a good olive oil, sea salt and pepper, but this weekend I enjoyed it at one of my favorite brunch spots tossed with peppery watercress and bitter radicchio.  It was so simple and delicious that I decided to make it again and add my own twist.  If you&#8217;re looking for a little something to pull you out of a salad rut, I think this recipe may do it.</p>

<p>When I first moved to New York as  young analyst, a group of friends and I would gather every Sunday night for a family-style dinner.  I loved it.  We would rotate among each others apartments, and we usually made something simple and comforting like pasta.  Over the years, friends moved away, lives got busier and our pasta night reunions became less frequent.  This weekend, though, perhaps out of nostalgia, I was inspired to make lasagna.  I was inspired by this <a rel="nofollow" target="_blank" href="http://www.food52.com/recipes/2734_arugula_lasagna">Arugula Lasagna</a>.  In my version, I left out some of the cheese, added more veggies, made a few swap-outs (brown rice lasagna noodles vs regular white noodles and sheep&#8217;s milk cheese vs regular cheese), and added an additional spice (cardamom) embraced by health beauties for its warmth and good-for-you benefits.  </p>

1/2 cup almond milk (I like the <a rel="nofollow" target="_blank" href=" http://store.bluediamond.com/Almond-Breeze-Original_p_17.html"> Blue Diamond </a>brand, Original) plus extra<br />
2/3 cup ricotta cheese, possibly sheep&#8217;s milk or goat&#8217;s milk (<a rel="nofollow" target="_blank" href="/detox-dictionary/detox-diet-foods/">why?</a>)<br />
1 cup freshly grated Pecorino Romano cheese<br />
1/2 &#8211; 1 teaspoon sea salt and pepper to taste<br />
1/2 teaspoon freshly grated nutmeg<br />
1/2 teaspoon cardamom<br />
3 cups (packed) collard greens, stems removed, cut into thin ribbons<br />
4 medium zucchini, trimmed and thinly sliced<br />
2 cups broccoli florets, finely chopped<br />
1 clove garlic, minced<br />
4 tablespoons organic butter<br />
2 shallots thinly sliced<br />

<li><strong>Collard greens</strong> &#8211; Collard greens are believed to contain nutrients that boost your bod&#8217;s natural detoxification work. </li>
<li><strong>Cardamom</strong> -Cardamom is a warm, sweet spice. It is considered an excellent digestive and believed to have detoxifying properties. </li>
<p></br></ul>
<h5>Directions</h5>
<p>Preheat oven to 325F degrees.</p>
<p>Prepare noodles as directed on package.</p>
<p>In a large skillet over medium heat, sauté zuchinni rounds in 1 tablespoon of butter, salt and pepper.  Sauté zucchini until slightly golden. Remove from pan and set aside.  </p>
<p>Next place broccoli with 1 tablespoon of butter in the same skillet over medium heat.  Add salt and pepper. Cook until just golden. Remove from pan and set aside.  Once again, in the same pan, toast up the shallots in butter, and then set those aside too.</p>
<p>Mix together 1/4 cup milk, ricotta, salt, pepper, nutmeg and cardamom.</p>
<p>Sauté collard greens in a tablespoon of butter just until wilted. Add minced garlic and sauté for about one minute. Add all but 1/4 cup of the collard green mixture to ricotta cheese mixture.</p>
<p>Add 1/4 cup milk to 8&#8243; x 11&#8243; casserole dish. Cover bottom of casserole with 3 homemade or prepared lasagna noodles. Layer with zucchini slices and half of the cheese and collard green mixture.</p>
<p>Add another layer of 3 lasagna noodles.  Top with a layer of broccoli and the remainder of the cheese and collard green mixture.</p>
<p>Top with 1 cup Pecorino, remaining collard greens and sautéed shallots.</p>
<p>Cover with foil and bake for 25 minutes. Remove foil and cook for an additional 15 minutes. When you remove foil, if corners look dry, add a little milk to each corner.</p>
<p>Let lasagna rest for about 10 minutes before slicing. I enjoyed mine with a big leafy green salad.  Delicious!</p>

<p>As you beauties know, there is more to cleansing than drinking &#8220;just juice.&#8221;  Choosing a few more veggie-centric meals is a form of mild cleansing too.  This weekend as you hunker down for a good football game or two, consider this Vegetarian Ancho Chili.  The ancho chiles add a nice smokiness without being too hot, though you could certainly dial up the heat by adding a few more.  For each chili you add, make sure and incorporate one additional cup of vegetable stock to the pot.  And don&#8217;t forget the good-for-you garnishes.  The addition of some crunchy bell peppers, creamy avocado, juicy corn kernels and scallions really made this chili come together for me.</p>

1 ancho chile, stem and seeds removed<br />
1 medium carrot*, diced<br />
1 celery stalk*, diced<br />
1 medium yellow squash*, diced<br />
1 green pepper*, diced<br />
1 medium shallot, diced<br />
2 cups vegetable stock<br />
2 cup diced tomatoes, fresh or canned<br />
1 tablespoon organic butter<br />
1/2 cup <a rel="nofollow" target="_blank" href="/raw-organic-food/benefits-raw-nuts-roasted-nuts/">cashews</a><br />
1 tablespoon cumin<br />
1/2 tablespoon curry</p>
<p><strong>garnish</strong><br />
1 &#8211; 2 medium scallions, diced<br />

<li><strong>Quinoa</strong> &#8211; Quinoa is a great source of protein (~6 grams per 1/4 cup serving). It is also a great source of fiber (nature’s perfect scrub brush to help with your body’s housecleaning, healing and repair work) and is easier to digest than most traditional animal-protein sources (beef, chicken, etc) in a rejuvenating lifestyle. </li>
<p></br></ul>
<h5>Directions</h5>
<p>Place quinoa and water into a pot.  Bring water to a boil and then reduce flame to a simmer until water evaporates and quinoa fluffs nicely with a fork. Set aside.</p>
<p>In a separate pot, add vegetable stock and the ancho chili.  Simmer until soft.  Then pour the vegetable stock and ancho chili reduction into a blender.  Purée until smooth. Set aside.</p>
<p>Meanwhile, place butter, shallot, carrot and celery into a large skillet over medium heat.  Add yellow squash and half of green pepper.  Sauté until just soft. Remove from heat.  Take half of the mixed vegetables and add them to the ancho chili reduction in the blender.  Puree ingredients until well combined, but slightly chunky.  </p>
<p>In a pot over medium heat, combine quinoa, mixed vegetable and ancho chili puree, remaining mixed vegetables and the diced tomatoes.  Toss in cashews and spices.  When hot remove from pot and serve.  Garnish with a combination of avocado, fresh corn, scallion and parsley.  Serve up in a hearty bowl for Gameday!<br />

<li><strong>Vibrant lettuces</strong> &#8211; Vibrant lettuces, such as radicchio, endive and kale, do an excellent job binding together with gunk in your digestive tract and flushing it from your system.  You are not truly cleansing, unless you are digging up AND releasing waste from your body.  </li>

<h5>Directions</h5>
<p>Prepare the dressing for the salad by combining olive oil, lemon juice, honey and mustard in a Ball jar.  Shake hard until well combined.  Season with salt and pepper.  Shake again.  Set dressing aside.</p>
<p>Place sesame seeds in a dry pan over medium heat, and toast until just golden, about 5 minutes.</p>
<p>In a bowl combine radicchio, endive, kale, basil and avocado.  Add dressing and toasty sesame seeds. Toss well.  Drizzle with a touch of honey and serve.  Enjoy!<br />
