Ever had a handful of roasted root vegetable “fries”? No? It might be time to add these fries into your rotation in 2011. Roasted root vegetables, like parsnips and sweet potatoes, are some of the best, cleanest comfort foods around. Your body immediately recognizes them and knows what to do with them. You get the nutritional benefit of a vegetable AND you get to enjoy a crunchy, salty food without the fat and oil from traditional french fries that eventually saddles itself on your hips. You might start out with one of these recipes:
