Good evening from snowy Vermont! I hope you all are having a wonderful weekend! I’ve received a bunch of emails over the weekend asking for a round-up of some of my favorite recipes brimming with veggies. I listed a few ideas below. What I love about them is that they are quick to make and they can be enjoyed as a simple side dish or combined into a beautiful main course platter.

While a leafy green salad is not always the first thing I think of when it comes to Christmas dinner, I find that more and more of my friends feel lost without one when they come to dinner. This is a little twist on an everyday salad.

Cozy Whipped Cauliflower & Thyme
These are great with a drizzle of warm butter and a pinch of sea salt. They’re great as an alternative to, or even in addition to, a beautiful bowl of whipped potatoes.

Roasted Butternut Squash Cubes
The fresh ginger and coconut adds an unexpected twist to this butternut squash recipe. Sometimes if I’m looking to make this into more of a main dish, I’ll toss it with a light and fluffy quinoa or a scoop of brown rice.

Thyme Brussels Sprouts + Quinoa Salad
This recipe celebrates a warm, caramelized brussels sprout – always a favorite of mine!

Warm Carrot Salad
This warm carrot salad features roast carrots, slivered almonds and plump raisins. Serve it as a fun alternative to a bread stuffing.
