How to Use Beets
Shave a beet and toss it onto your salads for some added crunch. These little beauties are also great in soups. Or enjoy them on their own – steamed or roasted – with a touch of feta or goat cheese.
How to Buy Beets
You want to make sure you buy a bunch of beets that are attached to a beautiful bunch of fresh (not wilted) greens. You want the round beet bulb to be firm. Both red beets and yellow beets are delicious.
How to Clean and Prepare Beets
To clean the beets, slice off the greenery. Then wash each beet to remove any dirt. Trim the ends. To prepare the beets, you may either roast or steam them.
To roast beets, place them in a tin foil pouch with a splash of water for ~1 hour in an oven at 375F degrees. When the beets are fork tender, remove them from the oven. Cool slightly and gently remove the skins.
To steam beets, place them in a steamer basket in a large pot of water. Bring the water to a boil and then let the beets simmer until for tender for ~1 hour. Cool slightly and gently remove the skins.
