All about raw corn
Fresh raw corn is juicy, sweet and flavorful. It also has a nice crunch. In its raw state, corn is actually considered a vegetable rather than a starch. Detox darlings like to eat corn raw because they believe it is more easily digested by your body. This then allows more of your body’s energy to be spent on healing and slimming work. Corn is rich in fiber and vitamins including vitamin C and vitamin B1 (thiamin), which supports good memory.
How to enjoy raw corn
Raw corn can be eaten fresh off the cob. However, I find it’s most delicious when trimmed from the cob and eaten with a squeeze of fresh lemon juice, cubed avocado and dill. I also love raw corn in a simple succotash or tossed into a salad with diced tomatoes, green onion, sliced orange bell pepper and a scoop of hummus.
Where to get it
Corn arrives in stores and at farmers markets beginning as early as May through September. Corn is best enjoyed immediately after picking because the sugars gradually turn to starch making it less sweet.
