Parsley Deserves To Be More Than Just A Garnish

I’m not entirely sure why, but I always seem to glance across beautiful bunches of parsley when I’m looking for recipe inspiration at the grocery store. Despite being mostly celebrated as a garnish, however, parsley (particularly flat-leaf parsley) has good flavor. And it’s good for you too.
Health benefits of parsley
In Ayurveda, India’s wholistic system of medicine, parsley is eaten in the spring to help your body naturally let go of its winter weight. Cleansing divas also recommend parsley year-round to help fire up your body’s natural digestion and crud removing work (essential to a good cleanse). Parsley is also believed to contain several times the vitamin C of citrus and is a good source of cholorphyll (a natural detox agent). Parsley has a laxative effect on sluggish digestion and relieves flatulence, stomach cramps and indigestion.

Next time you are meandering through the produce section of your grocery store, or local farmer’s market, take home a bunch of parsley and embrace it in one of these feel-good recipes. And remember when choosing a nice bunch of parsley, make sure it is a rich green color with perky leaves. I recommend rinsing your parsley and storing it wrapped in a moist paper towel in your refrigerator. It stays nice and fresh this way.
