The Last of Summer’s Herbs

Fresh herbs, including parsley and cilantro, are great, everyday foods to cleanse your body. While there are many suggestions on how best to preserve herbs for future use including: 1) slow drying them in the oven on a sheet pan, 2) tossing them into a pesto and then freezing the pesto and 3) placing fresh herbs into a ziploc bag in the freezer I really have found that storing them in “ice cubes” works best. I recommend taking fresh herbs, placing them into your food processor and adding just enough water to make the blades spin. Then pour the herb purée into an ice cube tray. Use your “herb cubes” in soups, stews and pestos all winter long.
