Real Food Review: Amy’s Organic Vegetable Lasagna

Even as you begin to incorporate one or two “detox-diet” friendly changes into your life, many of you have emailed saying you will not be giving up your Friday lasagna lunches from Amy’s Organic. Forget about it! However, you would be open to a few suggestions on how to make this meal a little more diet and “detox” friendly. Or said in a better way, you want to know how you can add a few vegetables that would support your body’s housecleaning, healing and repair work. This “housework” is good for your mood, your happiness and your figure.

My suggestions on how to elevate the detox goodness in Amy’s Organic Vegetable Lasagna are as follows:

  1. Place the lasagna over a bed of dark green baby spinach or thinly sliced Tuscan Kale. These dark leafy greens are rich in nutrients full of fiber to support your body’s cleansing and detoxification work. Enjoy these dark leafy greens with the gooey tomato sauce from the lasagna as your dressing.

  2. Pick up some roasted or lightly steamed broccoli from your work cafeteria to put on top of the lasagna. Try and make sure it’s not overcooked and consider mixing in a few uncooked florets too. Broccoli is loaded with protein and is rich in vitamins. Broccoli is also thought to have anticancer properties.

  3. Think out of the box, and slice up the lasagna in four sections. Place and roll up each section in a big cabbage leaf and make little lasagna wraps. Cabbage is a nutritious vegetable that is low in fat and may even help reduce body fat levels.


Note: Some detox beauties would argue that overtime you may want to consider a more “detox-friendly” lasagna which adheres to the basic principles of food combining by keeping the noodles (grain) and the cheese (animal protein) separated and later enjoyed at different meals. But remember, not everyone is on the same path. It’s about starting at a place which feels good for each of us.
