Tasty Carrot “Fries”

Seasoned with butter and dill, carrot “fries” make a nice alternative to greasy, deep fried potato fries. They are so easy and quick to make.

Next time you are at the farmers market, pick up a bunch of heirloom carrots when in season. I fell in love with these carrots this summer out on Long Island. Or use baby carrots to save slicing and dicing time for an easy, healthy meal after work.

Simply toss all the carrots together in a bowl with a little butter and dill and bake! You can also use olive oil, of course. Butter (organic if you can) adds a little richer, more indulgent taste in my opinion.

I prefer a hotter oven (~400-425 degrees), so that the carrots caramelize, and get a nice golden brown color. Usually 20-25 minutes in the oven at this temperature will do.
