Me too. Try this Young Coconut + Blueberry Smoothie for a little something different in your weekend repertoire. While working with a young coconut takes a wee bit of work, it’s worth the effort. The meat of a young coconut is creamy, fresh and delicious – not to mention the fresh young coconut water is pretty refreshing as well. Not sure where to find a young coconut? Head over to the produce section of your grocery store. They are usually kept in a cooler next to the pre-sliced mixed fruit. Then check out this easy way to open a young coconut and get going on the enjoyment of this creamy morning breakfast smoothie.
Young Coconut + Blueberry Smoothie
Serving Size: 1
Ingredients
Meat from 1 young coconut
Coconut water from 1 young coconut
1/4 cup blueberries
1 teaspoon of maple syrup or Agave nectar (optional)
handful of ice
Directions
First puncture the young coconut (with a nail and a hammer) and drain the fresh coconut water into a blender. Then open the young coconut and scoop out the soft, tender meat. Add the meat and blueberries to the coconut water. Blend. Add up to a handful of ice until you reach your desired thickness. Add a touch of maple syrup or Agave nectar if desired. Pour into a glass and enjoy. Fabulous.
