When you tell your friends about your new feel-good, look-good, diet-lifestyle, it creates some pretty confused faces. That is until you introduce them to a few of the delicious, fresh foods you are eating. Take this 3 Ingredient Cashew Cream, for instance, added to a “cereal” of fresh blueberries with almond milk, your relationship becomes whole again. (Especially when your friends find out not only how good this “cereal” tastes but also the benefits of eating this type of clean food.)
I hope you enjoy this nutty, and slightly sweet cashew cream as much as I do.
3 Ingredient Cashew Cream
Makes ~1/4 cup; Serving Size: 1/2 tablespoon, ~100-125 calories per serving
Ingredients
1 cup cashews (raw cashews are nice here if you have them)
1 cup almond milk (The Blue Diamond brand is a good one)
1-2 tablespoons water, filtered
1 tablespoon maple syrup
Directions
Place the cashews, maple syrup and 1 tablespoon of water into a blender or food processor. Let the ingredients combine for a good 30 seconds. You may need to scrape down the sides of the blender or food processor (depending on what you are using) occasionally. Add an additional tablespoon of water to facilitate blending if need be. The cashew cream is done when you scoop it all together and it looks like a nutty paste.

Your directions do not include the almond milk…?

For convenience I simply use the Blue Diamond brand of almond milk. Sometimes fresh almond milk can get a little tricky and time intensive as the almond skins need to be removed (they don't taste great in the milk).
