Lemon-Rosemary Apple Salad
Complimented with toasty almonds

This month a few of you have asked for some daily clean eating inspiration. And so I thought you might enjoy this Lemon-Rosemary Apple Salad. In this apple salad recipe, a good olive oil, fresh rosemary, a dash of fresh lemon zest and a squeeze of fresh lemon juice stand in for a traditional yogurt or mayonnaise dressing. This salad is one of my favorite breakfast salads. I also love it scooped into a little buttery lettuce leaf topped with a few toasty almonds as a simple afternoon snack. Lemon-Rosemary Apple Salad
Serving Size: 2 (~200 calories)
Ingredients
2 medium Golden Delicious apples*, peeled, cored and cut 1/2″ wedges
1/4 cup golden raisins, soaked in hot water for ~5 minutes
1/4 teaspoon fresh rosemary, finely chopped
1 medium organic lemon* (for juice and zest)
1 tablespoon extra-virgin olive oil
1 tablespoon sliced almonds
dash sea salt

Directions
Take the lemon and grate 1/2 teaspoon of lemon zest, careful not to take too much of the pith (the white part under the yellow skin) with you. It has a very bitter taste. After zesting, slice the lemon in half and place the juice of the lemon with 1/2 teaspoon of zest in a large bowl. Add olive oil, rosemary and a dash of salt. Whisk with a fork.
Add apples, raisins and almonds to the bowl. Toss ingredients with lemon-rosemary dressing. Enjoy!

I’m so happy to hear that! I have a yummy cream-free soup coming up for Monday that I think you might enjoy too.
