Brunch Salad with Kale, Pear and Walnuts

Over the past few weeks, a gaggle of family and friends have been passing through New York. It’s been a lot of fun. And as always when festiveness takes over my house, delicious treats from the neighborhood bakery proudly parade through the front door and bottles of wine take over my fridge. I get so excited and sometimes I forget that too many sweets these days gives me a sugar hangover. It’s kind of embarassing, actually. So I do my best to include a variety of different salads when I’m preparing a meal for friends and family. I find that when prepared in just the right way, brunch salads can be wonderfully satisfying and help me to avoid a post-brunch blowout!

Brunch Salad with Kale, Pear and Walnuts
Serving Size: 4 – 6
Ingredients
1 small bunch curly green kale*
1/2 head radicchio* lettuce, roughly chopped
2 Comice or Bosc pears*, cored and cubed
1/4 cup grated parmesan or Pecorino cheese
1/2 cup walnuts
juice of 1/4 lemon*
1/2 teaspoon lemon* zest
Sea salt and pepper

- Kale – Kale is full of nutrients with antioxidant and anti-inflammatory benefits that help your body to stay vibrant and youthful.
- Walnuts – Good fats including walnuts, enjoyed in moderation, will actually store in your body as energy and not fat which helps you lose weight in the long run.
Directions
Remove kale leaves from the stems and tear into small 1 inch pieces. Place kale leaves in a big bowl. Discard the stems.
Drizzle the olive oil on the kale. Using your hands, massage the olive oil into each individual kale leaf (as best you can). Keep up a good massage for a good minute or two. The longer you spend massaging the olive oil into the kale, the better and more delicious the salad will be. Add the lemon juice, lemon zest and parmesan cheese. Toss in a generous dash of sea salt and freshly ground pepper. Fold in radicchio, pear cubes and walnuts. Toss ingredients together and serve!
