Tried this recipe for the first time this morning & it really does taste amazing! Very light, refreshing and you really only do taste the banana. Thanks so much for all the information! Your sight's been very helpful!

Mel! how about soba noodles tossed in an olive oil vinaigrette with some fresh dill, snap peas, carrots and asparagus? I've also been into roasting asparagus in the oven, given all the fresh asparagus hitting the stores. If you roast it at ~400 degrees for 20-25 minutes with some olive oil and sea salt, it becomes caramelized and delicious. Tom and I also love little mini "pizzas". We make them with brown rice tortillas from Food For Life (check out the freezer section of your store). We toast them and then add some marinara sauce, a few sauteed veggies and some grated cheese. Super fast and delicious!

We tried a bunch of different smoothie varieties in Costa Rica with fresh fruits, but I think the spinach/banana classic is still my favorite. Really getting into grilling fish for dinner on a Le Cruset grill pan- easy, tastes great and generally a healthy dinner option. Any other healthy dinner ideas?
