Clean Eats: Green Goddess Pizza

For all you pizza lovers, here is a fun twist on the classic pie. This Green Goddess Pizza is loaded with lightly sauteed broccoli and creamy white bean pesto atop a crunchy brown rice crust. It features “clean,” easily to digest foods which are nourishing and support your body’s rejuvenating work.

Green Goddess Pizza

Serving Size: 2 (for a light lunch), ~350 calories per serving

Ingredients

2 broccoli crowns
2 brown rice tortillas
1 cup white beans
3-4 sprigs of basil
1 tablespoon of virgin coconut oil (I like Nutiva brand)
2 tablespoons of extra-virgin olive oil
juice from half lemon
1/4 teaspoon sea salt and pepper
1 clove of garlic, optional
shredded fresh parmesan cheese, optional

  • Broccoli is high in vitamin C and fiber. Beauties also love it for its potent anti-cancer properties.
  • White beans are loaded with protein and fiber. Fiber is crucial in a cleansing diet.
  • Extra-virgin olive oil and virgin coconut oil. A moderate amount of raw plant fat (including avocados, extra-virgin olive oil, raw nuts) in your diet is necessary for a naturally slim and energized body.
  • Brown rice tortillas. An easier toasted food for your body to digest (compared to most mainstream store chips), allowing more energy to be spent on healing and repair work.
  • Sea salt vs table salt: With sea salt you still get great salt flavor, and the benefits of some added minerals too.


Directions

To make the white bean pesto
Place beans, olive oil, basil, lemon, salt, pepper and garlic in a food processor. Process until thick and creamy.


To make the pizzas
Place coconut oil in a frying pan, and add broccoli. Lightly sautee the broccoli until it is just soft.

Meanwhile, split in half and then lightly toast brown rice tortillas in toaster. Place generous scoop of white bean pesto onto the toasts. Add sauteed broccoli on top of the pesto. Garnish with fresh parmesan cheese, if desired. Enjoy any remaining pesto with the brown rice tortilla chips! Enjoy with a small salad!
