Sit back and enjoy one last weekend of “summer in a cup”. Fresh fruit for breakfast is a great way to dial up your body’s overnight rejuvenation and slimming work. Celebrate fruit and strawberries this weekend in this Vanilla Strawberry Parfait.

Vanilla Strawberry Parfait

Serving Size: 1 (350 calories)

Ingredients

1 cup organic strawberries*, sliced
1/4 cup macadamia nuts
1 tablespoon of honey
1 teaspoon good vanilla
1 tablespoon of almond milk (I like the Blue Diamond brand, Original)

  • Strawberries Berries are packed with antioxidants which fight free radicals. Free radicals are believed to accelerate aging and contribute to disease.

Directions

First prepare macadamia cashew cream by placing macadamia nuts, vanilla and a splash of almond milk into a food processor. Pulse until combined and slightly chunky. You may have to scrape down the sides of the food processor periodically.

Place a layer of strawberries into a medium glass. Add a small scoop of macadamia cream and a drizzle of honey. Repeat strawberry, macadamia cream and honey layers. Top with a strawberry. Enjoy!
