The blueberries this time of year are sweet and delicious. If you’re like me, you’re doing everything you can to enjoy them in as many ways as possible right now. Blueberries are packed with antioxidants and fiber, which is crucial in a cleansing diet.
Detox Breakfast: Blueberry Cereal Recipe
Serving Size: 2, ~200 calories per serving
Ingredients
1 cup cashews (raw cashews are nice here if you have them)
1 cup almond milk (I like the Blue Diamond brand, Original)
1-2 tablespoons water, filtered
1 tablespoon good maple syrup
1 tablespoon sliced almonds (optional)
1 tablespoon flax seeds (optional)
Cereal
2 cups blueberries, rinsed

Directions
Place the cashews, maple syrup and 1 tablespoon of water into a food processor. Let the ingredients combine for a good 30 seconds. You may need to scrape down the sides of the food processor occasionally. Add an additional tablespoon of water to facilitate blending if need be. The cashew cream is done when you scoop it all together and it looks like a nutty paste.
In two bowls, evenly divide the blueberries. Add add 1/2 cup almond milk to each bowl. Top each serving with 1 tablespoon of cashew cream. Mix blueberries, almond milk and cashew cream together! Top with sliced almonds and flax seeds if desired. Enjoy!
