Detox-Diet Dinner Idea: Thyme Pesto Noodles

This Thyme Peso is so delicious. It takes a little bit of TLC to prepare, but it’s worth it. This pesto is fabulous on toast, as a dip with brown rice chips and it also makes a tremendous addition to noodles. If you haven’t already, give quinoa noodles a try (I recommend the Ancient Harvest brand). This quinoa based “spaghetti-style” pasta is a fabulous, less processed pasta than the refined pastas you find along most store shelves. And honestly, I don’t even notice a difference. I like this recipe hot or leftover from the night before and cold.

Detox-Diet Dinner Idea: Thyme Pesto Noodles

Serving Size: 2, ~300 calories per serving

Ingredients

For the thyme pesto
2 cups kale, washed and stems removed
1/4 cup thyme, stems removed (approximately one bunch)
1/2 cup extra virgin olive oil
1/2 cup garbanzo beans
1/2 cup walnuts
1 tablespoon lemon juice
sea salt and pepper to taste


For the noodles
2 servings quinoa spaghetti-style noodles (I recommend the Ancient Harvest brand)
1/2 tablespoon extra virgin olive oil

Directions

In a food processor, combine the kale, thyme, olive oil, gabanzo beans, walnuts and lemon juice. Combine until the pesto mixture is smooth and creamy. Add sea salt and pepper to taste.

Prepare two servings of the quinoa noodles, by following the directions on the box and making sure to use a big pot of boiling water. Remove when the noodles are al dente. Drain the noodles and combine them with two tablespoons of the thyme pesto and 1/2 tablespoon of olive oil. Serve and enjoy!
