Quinoa Linguine, Lemon + Arugula
A simple celebration of summer

Following the introduction to gluten-free quinoa pasta yesterday, I wanted a share a recipe with you. Sometimes it’s just nice to have a pasta recipe on hand when you are looking for a little inspiration outside of pasta with tomato sauce. (Though I will admit, pasta and tomato sauce is still one of my most favorite comfort foods!)
This Quinoa Linguine, Lemon + Arugula recipe is one of my favorite pasta dishes in the summer. While it’s arguably on the lighter, summery side, I envision myself enjoying this dish for just a bit longer into these early days of fall. This dish is inspired by one of my favorite restaurants in Montauk – The Crow’s Nest.
Quinoa Linguine, Lemon + Arugula
Serving Size: 2, ~350 calories per serving
Ingredients
2 servings Ancient Harvest Quinoa Linguine Pasta
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
sea salt and pepper to taste
1 cup arugula
Directions
For the quinoa pasta, following the cooking instructions on the box of pasta. Make enough for 2 servings. Consider adding a touch of salt to the water when cooking the pasta.
When the pasta is done, drain and then toss the pasta together with the olive oil and lemon juice in the pot. Combine well and then loosely fold in the arugula. Add a generous touch of sea salt and fresh pepper. Serve.
