This Collard Green and Portobello Pizza Wedge is a diet friendly, detox friendly dinner . It’s also a great dinner if you are looking for a way to cut back a little on your meat consumption. It’s quick to make and full of a rich, meaty flavor that both satisfies and leaves you feeling light and energetic.
This Portobello pizza wedge can be enjoyed simply with a little olive oil and cheese or it can also be dressed up like a pizza by adding a dollop of marinara sauce. This dish serves 1 or 2 people. I will often have 2 of these Portobello wedges for dinner with a salad and I find I am satisfied.

Collard Green and Portobello Pizza Wedge
Serves: 1 – 2 people; ~200 calories per serving
Ingredients
2 Portobello mushrooms
2 tablespoons good olive oil
½ bunch of collard greens
½ clove garlic, minced
2 tablespoon marinara sauce, optional
1 tablespoon parmesan cheese, optional
salt, pepper to taste
Directions
Preheat oven to 450F degrees.
Rub 1 tablespoon of olive oil on the mushroom caps. Place mushroom caps, gill-side up, on a baking sheet. Sprinkle with sea salt and touch of pepper. Roast until tender, 20 to 25 minutes.
Meanwhile, wash collards and remove stems. Roll the collards and then slice them in long ribbons.
In a frying pan add 1 tablespoon of olive oil and the minced garlic. If you like a little more garlic, please do add more to suite your tastebuds. Saute the garlic until soft, careful not to let it burn. Then add the collard greens with a touch of sea salt and pepper. Saute the greens until tender.
Remove the mushroom caps from the oven. Plate them on separate plates and top evenly with the tender collard greens. Add a sprinkle of parmesan and a dollop of marinara sauce if you like. Enjoy!
