Crispy Goat Cheese Salad with Pear

I’m always looking for more creative ways to eat greens. After all, leafy greens are wonderful when it comes to supporting youthful and vibrant skin. I find that a great dressing and a touch of cheese usually makes this journey-to-green an enjoyable one. As the weather turns a little cooler, this is how I’ve been embracing my greens this week.

Crispy Goat Cheese Salad with Pear

Serving Size: 1

Ingredients
for the salad
3 collard green leaves, stems removed and thinly sliced
1 comice pear, pitted and sliced into long strips
2 ounces of goat cheese, divided into two 1 ounce rounds
2 tablespoons panko bread crumbs
1 tablespoon extra virgin olive oil
1/2 tablespoon organic butter
for the dressing
1/2 tablespoon of extra virgin olive oil
1/2 tablespoon good maple syrup
1/2 tablespoon fresh lemon juice
1 tablespoon dijon mustard
Directions

In a Ball Jar, combine olive oil, maple syrup, lemon juice and mustard. Shake until well combined. Set aside.

In a plate, place the two rounds of goat cheese and drizzle them with olive oil. Gently coat the rounds with the bread crumbs, don’t worry if they don’t coat the rounds uniformly.

In a frying pan over medium heat place the butter and goat cheese rounds. Toast each side for ~30 seconds until the goat cheese is warm and the bread crumbs are slightly brown. Serve on a plate with the collard greens and pears. Drizzle with maple syrup dressing. Enjoy immediately……
