Vegetable Pizza Never Felt So Good To Eat!

Approachable and gradual swaps are good (sea salt vs table salt) when it comes to feel good, look good living. Going too far too fast (say giving up pizza?) not so sustainable. Healthy, happy, natural living is about doing your best to eat foods that are delicious AND considerate of ingredients that are easily recognizable, utilizable and easily digestible by your body. Feeding your body these types of foods then gives your body more time to focus on its housecleaning, healing and repair work. This “housework” is good for your mood, your happiness and your figure. Three cheers for detox friendly pizza!
Gluten-Free, Low Calorie Detox Pizza
Serving Size: 1-2 people, ~270 calories each
Ingredients
2 Brown rice tortillas (I recommend the Food For Life brand
½ cup tomato sauce
2 cups yellow squash, sliced in thin rounds
2 cups asparagus (20 stalks)
1/2 tablespoon of olive oil
A few large shards of parmesan cheese (optional)
Sea salt and pepper, for taste

- Brown rice tortillas are made with an easier-to-digest grain which allows more of your bod’s time to be spent on rejuvenation and slimming work as opposed to digestion all the time. I recommend the Food for Life brand.
- Sea salt vs chemical-filled table salt. You still get all the flavor, and the benefits of some added minerals too. Learn more here.
Directions
Take two brown rice tortillas from your freezer and break them each in half. Place them in the toaster, one at a time. You may need to rotate the slices around half way through so they toast evenly on both ends (they are somewhat large).
While the tortillas are toasting, place the asparagus and yellow squash into a frying pan with the olive oil. You may also use a splash of water instead of the olive oil if you prefer. Saute the veggies until they are just tender and golden. At the very end of the cooking, add the tomato sauce to the vegetables in the pan just to warm it up.
Take the two toasted tortillas and place them on two plates.
Remove the vegetables and sauce from the frying pan and place them evenly on the two tortillas. Top with a few large shards of parmasan cheese if you like. Enjoy!

Love! I have always bought brown rice tortillas – but they are so hard to use in the typical tortilla way because of their texture and consistency. They are PERFECT to use as pizza crusts and really do taste like thin crust pizzas. I am now obsessed and have had them every night this week so far.

I woke up from a nap STARVING and needed something quick, so I started getting into my husband's chip stash (uggh), but I remembered that I wanted to try this recipe. It was so quick to make! I topped mine with fresh goat cheese and ooohhh la la! Thanks for saving me from my husband's annoying junk food.
