Goat Cheese Salad with Honey + Beets

Ingredients
2 cups baby spinach
1 medium beet, grated
3 asparagus spears, trimmed + chopped
1/2 medium orange bell pepper, roughly chopped
2 ounces soft goat cheese, crumbled
for the dressing
1 tablespoon extra virgin olive oil
2 tablespoons fresh orange juice
1 teaspoon fresh ginger, grated
sea salt and pepper
drizzle of honey

Directions
To prepare the dressing combine olive oil, fresh orange juice and ginger into a small bowl. Whisk ingredients together. Add salt and pepper to taste. Whisk again. Set dressing aside.
Place baby spinach on a plate. Top with grated beet, asparagus, bell pepper and goat cheese. Drizzle dressing on top with a touch of honey. Enjoy!
