Juicer Recipes: Unexpected Pineapple and Beet Punch

I was craving a mug of fresh vegetable juice this week so I went to the store and grabbed a bunch of tender beets. Earlier in the week, I made this Beet and Apple Juice Cocktail. And with a few beets remaining, I was anxious to make another round of juice. As many of you know, beets are available most of the year, though the best time to buy them is June through October, when they are at their most tender. In this particular recipe, I find the beet juice to be sweet ⎯with almost a warmth to it ⎯perfect for these cooler days of fall.
Unexpected Pineapple and Beet Punch
Serving Size: 1 (16 ounces)
1 large red, raw beet, trimmed
3 stalks celery
1/4 slice of a fresh pineapple, trimmed and cored

Press ingredients through a Breville, or good powerful juicer. Pour into a glass and enjoy!
