Kale Salad with Cranberries and Walnuts

Cleansing beauties love to eat leafy green salads before most meals – especially a big meal. Leafy greens, they believe, not only help to draw out toxins and crud from your bod (crud = excess weight) but these leafy greens also help your body to digest and eliminate less hydrating foods (ie – your turkey dinner). This ultimately allows your body to return more quickly to it’s beautification and slimming work.
Kale Salad with Cranberries and Walnuts
Serving Size: 1 (~350 calories)
Ingredients
2 cups kale, stems removed
2 tablespoons dried cranberries
1 tablespoon walnut pieces
1 ounce honey goat cheese
1 tablespoon toasted sesame seeds
1 tablespoon good extra virgin olive oil
touch sea salt

- Kale – Kale is a nutritional superstar and a health beauty favorite in our quest for radiant skin. It is full of antioxidant and anti-inflammatory benefits that help your body to stay vibrant and youthful.
- Goat cheese – Goat and sheep cheese contain a smaller protein molecule which is believed to be less gluey and easier for your body to digest and eliminate. Excess waste = body weight.
- Olive oil – Good quality fats (including avocados, “cloudy” extra virgin olive oil and nuts), enjoyed in moderation, will actually store in the body as energy and not fat which helps you lose weight in the long run.
Directions
Tear kale leaves into small bite sized pieces and toss into a large bowl. Add olive oil and massage kale leaves very well (for about 1 minute until the leaves are oily and tender). Toss in cranberries and walnuts. Add a dash of crunchy salt. Toss and set aside.
In a small frying pan over low heat, coat the goat cheese round with the sesame seeds. Remove the goat cheese round from the heat when just warm and place it on the salad. Enjoy immediately!
