Peach Chia Seed Pudding

In the Hamptons, there is a breakfast pudding made from chia seeds that is gaining a cult following. Chia seeds are believed to be a complete protein (1 serving = 5g protein), rich in calcium and iron, good-for-you essential fats, fiber and antioxidants. They are also low in calories (1 tablespoon = ~50 calories), and when combined with water (or preferably milk), form a creamy gelatin pudding (they are estimated to absorb ~10 times their weight in liquid). Here is a simple and fruity chia seed pudding recipe.

Peach Chia Seed Pudding

Serving Size: 1, ~350 calories

Ingredients

1/3 cup cashews, raw and unsalted
1/3 cup filtered water
2 tablespoons good maple syrup
1/4 cup peaches, frozen
1 tablespoon chia seeds

Directions

Place cashews, water, maple syrup, chia seeds and peaches into a good blender. Blend until well combined. Pour ingredients into a bowl. Set bowl in the refrigerator for ~15 minutes until the chia seeds and the milk thicken. Enjoy!
