Heirloom Tomato + Avocado Soup
Serving Size: 2 , ~300 calories per serving
Ingredients
2 large red heirloom tomatoes, roughly chopped
1 1/2 avocados, peeled and pitted
2 tablespoons sundried tomatoes
sea salt and pepper to taste

Directions
In a juicer, insert the tomatoes to make ~16 ounces of fresh juice.
Combine the tomato juice with one avocado and the sundried tomatoes. Blend the ingredients well. Add sea salt and pepper to your taste. Depending on your blender consider adding a few tablespoons of vegetable broth or water to facilitate blending.
Pour the contents of the blender into two bowls. Garnish with remaining avocado. Enjoy!
