Super Yummy Greek Salad Wraps
Serving Size: 1-2
Ingredients
3 large romaine lettuce leaves
1/4 cup olives, sliced
1/2 cup cherry tomatoes, quartered
1/2 cup thin green beans (haricots verts), ends trimmed
1/4 cup crumbled feta cheese
1/4 cup cucumber, diced
2-3 sprigs dill, finely chopped
2-3 sprigs fresh parsley, roughly chopped
1 medium scallion, diced
for the dressing
1 tablespoon extra virgin olive oil
1 tablespoon dijon mustard
1 tablespoon balsamic vinegar
1/2 teaspoon honey
sea salt and pepper to taste

Directions
To prepare the dressing combine olive oil, mustard, balsamic vinegar and honey into a small bowl. Whisk ingredients together. Add salt and pepper to taste. Whisk again. Set dressing aside.
Meanwhile, place romaine lettuce leaves on a plate. Top with haricots verts, tomatoes, feta, olives, cucumber, dill, parsley and scallion. Drizzle with mustard vinaigrette. Enjoy!
