Vegetable Buddha Bowl
Serving Size: 1 (~350 calories)
Ingredients
1 cup broccoli florets
1 cup cauliflower florets
1 cup kale, stems removed, loosely packed
1/2 medium tomato, sliced
1/4 bell pepper, sliced
1/4 avocado, sliced
2 tablespoons extra-virgin olive oil
1/2 fresh lemon
Sea salt and pepper to taste

Directions
Place cauliflower and broccoli florets in a bowl and toss with 1 tablespoon of extra virgin olive oil, sea salt and pepper. Place florets on a baking sheet and roast in the oven for ~20 minutes at 400F.
Meanwhile, tenderly massage the kale leaves with olive oil and set them in the bowl. Add the tomatoes and bell peppers. When the broccoli and cauliflower florets are slightly brown and crispy remove them from the oven and place them into the bowl. Add avocado slices. Squeeze fresh lemon on top and season with salt and pepper. Enjoy!
