15 Minute Spa Meals: Detox Salad
Light and fresh
Posted November 26th, 2012 by noelle |
Hello everyone!! It’s great to be back up and running! Sorry to have disappeared for a few days – a funky virus got in the way. But all is fixed and things are better and stronger than ever! Hooray!
Anyhoo, I hope you all had a wonderful Thanksgiving! I’m sorry I didn’t get a chance to share many of the holiday recipes I had lined up. But, the awesome thing is many of these veggie-focused meals can stand on their own anytime of year! And I look forward to sharing them with you this month! In the meantime, I have lined up several light and fresh meals to nourish and rebalance your body and spirit this week⎯just in case you too were served more than your fair share of whipped potatoes and pumpkin pie.
To kick things off, I wanted to share this Detox Salad recipe. I have been enjoying variations of this recipe all weekend! It’s packed with nutrient rich kale (for vibrant skin and a youthful glow), crunchy apples (sweet and fiber packed), toasty almonds (for a protein boost) and a dash of coconut. For a little more staying power, I recommend pairing this salad with a fresh veggie juice (like this one) or a creamy avocado toast. You might also enjoy this salad with a hummus toast like this one.
Here’s to a great week! – Noelle

1/4 head Tuscan kale*

- Kale – Kale is a nutritional superstar and a health beauty favorite in our quest for radiant skin. It is full of antioxidant and anti-inflammatory benefits that help your body to stay vibrant and youthful. Learn more here.
- Olive oil – Good quality fats (including avocados, “cloudy” extra virgin olive oil and nuts), enjoyed in moderation, will actually store in the body as energy and not fat which helps you lose weight in the long run.
Prepare the kale and slice it into long, thin ribbons. Drizzle with one tablespoon of olive oil, and using your hands, rub the olive oil into the kale leaves; Make sure all the kale ribbons are well coated. (Looking for a little more visual love? Head over here!) After the kale ribbons are well massaged with olive oil, set aside.
In a frying pan over medium heat toast coconut and almonds until just slightly brown around the edges.
Toss coconut and almonds with the kale. Add a splash of lime juice, a pinch of salt and a drizzle of honey. Toss again. Enjoy immediately!
