This Wild Spinach-Strawberry Green Smoothie is a wonderful way to celebrate the last few weeks of Spring’s most tender baby greens and also begin enjoying the arrival of early summer strawberries on the East Coast.
This past weekend I actually discovered wild spinach as I meandered around my local farmer’s market here in New York. This smoothie would also be fantastic with baby spinach or a dark, curly green spinach. Both of these spinach varietals are carried at grocery stores across the country. This is a picture of wild spinach and also of some beautiful peonies I took home from the market this weekend.

Don’t be afraid of a green smoothie just because it’s green. Contrary to what you might think, green smoothies don’t taste like a rabbit patch. Wild Spinach-Strawberry Green Smoothie
Serving Size: 1
Ingredients
1 cup fresh strawberries
4 ounces water, filtered
3-4 ice cubes
1/8th TEAspoon Stevia (honey or agave nectar would also be nice)
Directions
Combine spinach, strawberries, water, ice and Stevia into a blender. Combine well. Pour into a glass and enjoy!
Notes
Stevia is a plant native to Central and South America. It is 300 times as sweet as sugar, but has zero calories. A little Stevia goes a long way. I recommend the Nu Naturals brand of Stevia in powdered form. Stevia can be found in most grocery stores as well as on Amazon.com.
