Creamy Goat Cheese + Roasted Red Pepper Dressing Round Up

Sometimes all you crave is healthy food, but planning for it can be such a pain. Nip that negative thinking in the bud this week and whip up a batch or two of this Creamy Goat Cheese + Roasted Red Pepper Dressing. Creamy Goat Cheese + Roasted Red Pepper Dressing

Makes just over 1/4 cup

Ingredients
1/2 cup roasted red peppers (try peppadew peppers if you can find them)
1 ½ – 2 ounces herbed goat cheese
2 tablespoons of dill
1 tablespoon good olive oil
1 tablespoon filtered water
Sea salt, pepper to taste

Directions

In a food processor combine the peppers, goat cheese, dill, olive oil and water. Blend well. Add touch of sea salt and pepper to taste.

Notes: Use any remaining dill chopped up in a salad or consider making fresh pressed juice! This Frothy Pink Tomato Juice would be a good one.

  1. Crudite dip. Use this dressing as a dip for your favorite farmer’s market fare.
  2. Spread on toast. This thick, creamy spread would be delicious on a piece of sprouted grain toast. Enjoy it spread on toast with a simply dressed salad for lunch or even as a healthier alternative to your bagel and cream cheese breakfast.
  3. Collard wrap. Toss this creamy dressing in a collard wrap for a healthy afternoon snack instead of that pretzel habit you have been trying to break.
  4. Salad dressing. You could also consider adding an additional ½ – 1 tablespoon of olive oil and using this dressing in a salad. Just take the dressing in a Ball jar to work, toss it in the fridge, and give that office salad the spicing up it deserves. After all, a girl can’t live on bottled dressings alone.
  5. Compliment brown rice or quinoa dishes. I also love this creamy goat cheese dressing mixed into a serving of brown rice or quinoa to pump up the flavor profile.

    Sure! I actually find Montchevre's mediterranean herbs + garlic quite nice. it has a great flavor and the garlic is there but definitely not overwhelming and doesn't linger in your mouth. Sometimes I'll also head to my local cheese shop and experiment with one or two goat cheeses there - but Montchevre is really good, easy and affordable. Let me know what you think!
